We buy the same farms every year
Which is less romantic than it sounds and more useful than it looks. It means we know what the harvest did before it arrives — how the rain fell, how long the beds ran, whether the mill changed hands.
It also means the people who grew it can plan past this season. That is the part that matters, and it is the part most supply chains are built to avoid.
The Ritual
Ground to order, never before
Coffee starts losing what makes it worth buying about fifteen minutes after it is ground. So we only sell whole bean, and we would rather you bought a grinder than bought more coffee.

Good coffee is a group project
Growers, roasters, the people behind the bar, and whoever is holding the cup. We are the smallest part of that, and the least replaceable part is never us.
